With this mini staycation, it's been great to have a break from the internet and blogging. Actually, I recently cracked my iPhone display screen so while it's becoming repaired, I don't have access to Email, Facebook, Twitter, or Instagram. At first I didn't know very well what to do but found myself actually attending to in conversations rather than constantly examining my notifications.
But today, I just couldn't resist blogging because you certainly want these ginger oatmeal cookies in your life.
I was experimenting when I made these. I understood that I needed to make a cookie for the holidays and nothing at all beats a chewy molasses cookie, but what was going to allow it to be special?
A little brown butter. And a little oatmeal for a perfect chewy consistency.
You guys know how Personally i think about brown butter, right? It's virtually the love of my life. Most of my cookies have dark brown butter, because I find it makes them a little more extraordinary.
And in ginger oatmeal cookies? It's provides a distinctive caramel-like richness. The molasses, oatmeal, and brown butter together are simply just extraordinary.
I love rolling these in just a little sugar to make them pretty. If you like, you could roll them in a cinnamon-sugar mix to create gingerdoodles (ginger + snickerdoodles)! Oh, and these cookies will stay smooth and chewy for days from the molasses and darkish sugar! Just maintain them within an airtight container.

Ingredients
3/4 cup rolled oats
1 teaspoon cooking soda
1 teaspoon all spice
1 cup packed dark brown sugar
1/4 cup molasses
1 large egg
Instructions
Whisk collectively the flour, oats baking soda, cinnamon, ginger, nutmeg, all spice, and sodium in a dish and set aside. Melt butter inside a saucepan over medium heat. The butter will begin to foam. Be sure you whisk consistently during this procedure. After a couple of minutes, the butter will begin to brown on the bottom of the saucepan; continue to whisk and remove from temperature when the butter starts to brown and present away a nutty aroma. Instantly transfer the butter to a dish to prevent burning up. Reserve to cool for approximately 5 minutes.
With an electric mixer, mix the butter and brown sugar until thoroughly blended. Beat in the egg, vanilla, and molasses until soft and creamy. Add the dried out ingredients slowly and beat on low-speed simply until combined. Chill dough in refrigerator for about a quarter-hour (that is to make the dough simpler to move into balls).
Preheat the oven to 350 degrees F. Grab a large tablespoon or so of dough and move into a ball and roll in sugar combination. Place dough balls on cookie sheet. Bake 9-11 minutes. Remove from range and cool the cookies on bed linens about 2 minutes then transfer to a wire rack. If you want cookies with a crispier sides, bake about 12 mins. They'll still remain gentle on the inside. Repeat with remaining dough. Makes about 20 cookies.

i made these!!! proceeded to go straight from your own formula_the ONLY matter i changed was the addition of walnuts. (greatest plan I've got all day)
these were OUTSTANDING. mine flattened a lot more than the picture here, but i think my very previous baking soda is to blame. My dough also appeared very wet, therefore i may not have measured the flour perfectly.
the amount of dried spices is right on, i want to find a spicier dried out ginger the next time (or maybe grate a teeny bit of fresh) to essentially give them a bite.
The brown butter flavor is out out of this world delish.
Old! Mine required about 15 mins to bake, but probably because I halved the amount of oats.
